Now here’s a nice recipe that is easy to make.

It’s fine if you want something vegetarian.

The ingredients are:

1 large onion chopped up into small moons
1 large beetroot peeled and chopped up into small cubes
2 parsnips peeled and sliced
1/4 cabbage sliced
2cm knob of fresh ginger peeled and chopped finely.
A cup of dessicated coconut
A teaspoon of salt
A dessertspoon of chia seeds
2 tablespoons of olive oil

Now once you have the ingredients ready get a large frypan or wok with a lid. Fry the onion in the oil and add in the beetroot the parsnips the ginger the cabbage and the chia seeds.

Cook gently until the veges are all softened then stir in the salt and coconut and cook a little longer then it is ready to serve. This has a lovely sweetish coconut flavour.

What shall we call it? Something like Coconut beetroot with parsnips.
