I bought about 3kgs of strawberries for $3 for making jam at the Ferny Grove markets this morning. Actually most of them were in perfect condition so I did munch a few while washing and taking the tops off to make jam.

My Golden Wattle strawberry jam recipe asks for:

4 parts by weight of strawberries
3 parts by weight of sugar.

Wash the strawberries and cut off the leaves and any bad bits. Weigh and put in a large pot with half the sugar. Cover and leave overnight.

Bring to the boil and add the rest of the sugar. Boil briskly until setting point is reached.

Bottle and cover while hot.

It takes a lot of power to make jam so is a high carbon pollution activity. Any suggestions? The high sugar content isn’t healthy for us either but it is delicious.
