Is your scone recipe ‘the best’? Let’s share recipes and come up with simply the best!
Here is one I was given recently by Joan in my writing group. We had it today and it was yummy but it will improve with practice.
Joan’s Scone Recipe
Ingredients:
[ul]3.5 cups self-raising flour
pinch salt
2 tablespoons icing sugar
2 teaspoons baking powder
2 good tablespoons butter
1.5 cups buttermilk
Half cup milk[/ul]
Preheat oven to 250.
Sift flour icing sugar salt and baking powder together.
Rub in butter.
Stir through milk and buttermilk until a soft dough forms. You may have to add more milk if the mix is too dry.
Turn out onto a floured board or tea towel.
Have ready a greased lamington tin dusted with flour.
Pat or press the dough out to a square about the size of the tin.
Cut into squares with a knife and pack side by side i the tin.
Cook on the top shelf of the oven.
Check in about 10 minutes whether they are done.
Eat hot with jam and whipped cream if that is how you like them.
Thanks Joan.
