Do you get a glut of passionfruits? This is a very quick simple use for them all and stops them being wasted.
Cut one end off and scrape the contents into a pot. When you have processed them all in this way add sugar generously and a little bit of water. Cook for a few minutes to dissolve the sugar.
Strain them through a good sieve to remove all the seeds.
The resulting cordial can be kept in the fridge in a bottle until needed.
To use pour several centimetres of the cordial into a glass and thin down with water.
