[b]Prawn Mango and Avocado Salad with Coconut Dressing[/b]

You can get into a debate about the best-flavoured mangoes. This recipe was provided by a demonstrator in a supermarket giving taste tests of 4 types of mangoes. My vote went to the Kensington Pride.

500g medium or large cooked peeled prawns
2 medium Kensington Pride mangoes
2 small avocados
1/2 sliced red onion
1 stick celery cut into 5mm lengths
1 punnet cherry tomatoes (grow your own!)
1 Cos lettuce

Coconut Dressing[/u]
1/2 cup coconut cream
1 tspn grated fresh ginger
2 tbspns lemon juice
2 tspns brown sugar
1/2 tspn curry powder
1/4 tspn turmeric
3 drops tabasco sauce

Blend dressing ingredients together and put into the fridge until needed.

Cut up Cos lettuce mangoes and avocado. Place all ingredients in a bowl and drizzle with coconut dressing to coat. Serve and enjoy. So delicious it is worth saving as a special dish for Christmas and making an institution.
